What is included in the program:
The culinary program is a 2-year program that services Junior and Senior high school students that desire to learn and work in the culinary field. The program offers 3 credits per year. The 2011 Junior Related class is an in-classroom course that allows time for the ProStart Curriculum to be taught. Upon completion of the 2-year ProStart curriculum, the students will recieve a certificate of completion that allows for college credit and industry bonuses. Juniors will also use the Related classroom time to learn the ServSafe information and then become ServSafe certified. The 2011 Seniors will work from the Johnson and Wales University textbook. The program consists of a full-service restaurant where all students learn various job skills. These skills include, but are not limited to: waiter/waitress, host/hostess, busser, dish washer, pantry cook, sandwich cook, grill cook, fryer, and baker. Most job skills are attained through the student-run restaurant attached to the classroom. Essentially this is a working classroom and kitchen environment.
Students are required to supply a black chef coat, black chef hat, checkered chef pants, black socks, and industry approved black work shoes. Please DO NOT purchase these items on your own. We will discuss in detail the uniform requirements once class begins in August. We try to create fundraisers that help pay for some of this cost. Should you have any concerns about the uniforms, please contact the teacher for more information.
